Kune Kune Cutlets Smothered in a Green Tomatillo Sauce

Ingredients needed:

8 Tomatillos

1 Medium Onion

1 Tbs. Garlic

3 Vine Tomatoes (can substitute with a can of diced tomatoes or rotel)

4 Pork Cutlets

Olive Oil

Salt and Pepper

First, make sure you take the papery outside of the tomatillos off.

Chop 8 of them up into little pieces.

Dice a medium sized onion, 1 tablespoon of raw or jar garlic, 3 vine tomatoes.

Add ingredients to a medium sized frying pan and drizzle some olive oil over it.

Let simmer for 30-45 mins or until it’s nice and saucy looking.

Take 4 raw Kune Kune pork cutlets produced by your local farmer 😘, and, sprinkle some salt and pepper on one or both sides.

Braise in olive oil until golden brown on both sides (about 5 mins per side or until cooked through).

Walah!! A beautiful dinner, Paleo approved!
